Sargee Weekly Recipes (For those who like cooking!)
25 April 2006, 22:38 by Sargee

Gaming site i know, but Wud liked my ciabatta recipe so much i decided to make a weekly blog!

Week #1 : Steak Ciabatta With Red Onion + Pepper Mayonaise

Ingredients

  • 1 Sirloin Steak (About 250g)
  • 1 Onion (red or white)
  • 1 small ciabatta
  • 2Tblsp Mayonaise
  • 1Tsp Mustard
  • Salt + Pepper
  • Additional items (Steakhouse Chips, Peas, Onion Rings) According to hungryness

Method

Make sure you Pre-Heat your oven to 180oC to prevent excess cooking time.

1. Add your chips to the oven, do nothing for 15 minutes then add your onion rings.
2. Take your steak and coat with salt and pepper & mustard to taste
3. Fold the steak into some clingfilm
4. Hit with a meat tenderiser several times on each side to tenderise the meat and break the seasoning into it and set aside on a plate.
5. Slice your onion into rings (these will seperate during cooking)
6. Slice the ciabatta in half and sprinle with a liberal amount of water, set aside (Store in a microwave prefferably)
7. Heat a heavy based griddle pan until its piping hot.
8. Unwrap the steak and place into the griddle pan, cook for 3 1/2 Minutes then turn over to cook for another 3 1/2 minutes on the other side.
9. Wrap the steak in tin foil and set aside. Place the onions into the pan with a little bit of butter and turn the heat down by half.
10. Place the ciabatta into the oven for 3 minutes to warm it through.
11. While the ciabatta is in the oven, take the mayonaise and mix a liberal amount of pepper into it.
12. Shake the onions in the pan to make sure they are cooking nicely.
13. Take the ciabatta out of the oven, spread the mayonaise on both sides.
14. Unwrap the steak from the tin foil and place on the ciabatta
15. Take the onions out of the pan and top onto the steak. Place the other ciabatta half on top.
16. Serve up the chips and onion rings (and pea's if you made/like them).

Enjoy!

Next weeks recipe : Roast Duck

*** Wud : For a gravy/sauce it depends on what your cooking. Usualy i use the water from cooking up leeks, with some mixed herbs, juices from the meat thats being cooked + a thickening agent (gravy granules, + cornflour usualy).

Use the tin you have roasted the meat in, add some gravy granules too the juices and heat in the roasting tin over the hob. The sauce should thicken with heat + stirring.

Loads of different sauces for lots of different meat though!
